If you’re looking for the best no-bake cookies you’ve ever tasted, this is it. My husband Dave lived off of chili-macs in college (gross… don’t try it). Thank goodness he married me, and I love to cook. Otherwise, he might still be eating food simply to not be hungry, not knowing just how good homemade food can be.

He still doesn’t cook much, but he told me he lived on these no-bake cookies as a teenager. He found an easy recipe that didn’t take too many ingredients or too much time to make, and memorized it. That way he could hurry home from school, make his afternoon pan of no-bakes, eat them, and clean up the evidence before anyone else noticed and came to claim some. Feels like a scene out of a Hunger Games movie to me, but he learned his recipe well and still makes no-bakes for a quick treat!

If you’re looking for a quick and easy treat you can make right on the stove (no baking required), here’s the best recipe. I think it’s even somewhat better for you than typical cookies with all of that oatmeal, but we won’t go as far as calling it healthy.

No Bake cookies

I love that these cookies don’t heat up my kitchen in the summer, since they don’t have to bake in the oven. They are made right on top of the stove in one pan. Quick and easy. Not much prep, no complicated steps or ingredients. Just the way a classic no-bake should be! Hope you love them just as much as we all do.

Instructions

  1. Combine the butter, milk, and sugar in a bowl and bring to a boil. Stir the ingredients as it boils and let it boil for 3-4 minutes. 

    After you turn off the heat add the peanut butter and stir it with a spoon or whisk. Once the peanut butter is dissolved add the oatmeal and blend it in. Once the oatmeal is blended in add the cocoa and vanilla. 

    When all the ingredients are blended together, scoop out the cookies with a spoon. Before you scoop out the last one leave some in the pan and grab a cup of milk and enjoy the fruits of your labor!

Note

Dave has altered his no bake cookie over the years. He now replaces some of the sugar with vanilla protein powder. Less sugar, more protein = maybe even dared to be called a healthy snack.

Can I make these ahead of time?

Yes!  As long as they are stored in an air-tight container, these no bake cookies will stay fresh for a few days.  No need to refrigerate.

Can I double the batch?

Absolutely!  This easy recipe will double very easily.  Just make sure you have a pan big enough to hold all of the ingredients as they cook. 

Can I substitute the milk for non-dairy?

Yes, that will work just fine.  Feel free to use your favorite milk or non-dairy milk substitute.
